GINGER-ORANGE CARROTS | |
Servings: About 4. Preparation time: About 10 minutes. Cooking time: About minutes. 1 lb. carrots, peeled and quartered, lengthwise 1/2 c. (1 stick) butter 1/2 c. thawed frozen orange juice concentrate 1 tbsp. honey 1/2 tsp. ground ginger 1/2 tsp. salt Crystallized ginger, thinly sliced, optional garnish Place carrots in 4 or 6 quart pressure cooker. In small saucepan over medium heat, melt butter. Remove from heat and add orange juice, honey, ground ginger and salt, mixing well; pour over carrots. Close pressure cooker cover securely. Place pressure regulator on vent pipe. Cook at 15 pounds pressure 3 minutes. Cool pressure cooker at once. Do not attempt to remove cover until pressure is completely reduced. To serve, stir in crystallized ginger. |
