ITALIAN BISCOTTI 
6 eggs
1 1/2 c. sugar
1/2 c. butter, melted
4 c. flour
2 tsp. baking powder
2 tbsp. vanilla

Melt butter and cool. Beat together all ingredients. Grease 2 cookie sheets. Spoon batter, making a loaf- 2 loaves each sheet.

Bake at 375°F for 15 minutes. Remove from oven and slice loaves on the diagonal. Lay slices on side and put back to brown to a golden color. Turn cookies over and repeat - just check them as ovens vary.

So good dunked in coffee or tea. If you feel like being fancy melt semi-sweet chocolate and dip or spread the bottom of biscotti in it.
