VEGETABLE-FRUIT CAKE 
3 cups all-purpose flour
2 tsp. baking powder
1 tsp. salt
2 cups sugar
1 tsp. baking soda
1 cup broken nut meats (optional)
1 1/2 cups vegetable oil
1 tsp. vanilla
3 eggs, beaten
2 cups grated carrots
1 cup coarsely chopped apples
1 cup crushed pineapple, well drained

Preheat oven to 350°F. Sift together first 5 ingredients; set aside.

Add nut meats. In a large bowl, place oil and vanilla and well beaten eggs. Beat 2 minutes. Add carrots, apples, and well drained pineapple. Stir until ingredients are well combined. Add half of the dry ingredients at a time to the fruit/vegetable mixture. Beat well.

Grease and flour large angel food cake pan. Spoon cake mixture into pan. Bake in preheated oven at 350°F for 1 hour.
