FRIED ONION RINGS 
1 1/2 c. all purpose flour
1 1/2 c. beer
1 tsp. salt
Vegetable oil
3 lbs. lg. Spanish onions, cut in 1/4" thick rings

1. Whisk flour with beer and salt. Cover and rest at room temperature at least 3 hours.

2. Preheat oven to 200 degrees. Line cookie sheet with heavy brown paper. Pour oil in pan to depth of 3"; preheat to 375 degrees.

3. Dip a few onion rings into batter. Deep fry 2 to 3 minutes each side, until evenly browned. Drain. Place on cookie sheet and keep warm in oven until all rings are fried. Repeat with remaining rings, adding oil if necessary. Serves 6.
