POLYNESIAN SHRIMP BOATS 
1 med. pineapple
1 lb. cleaned & cooked shrimp or 3 c. cut up cooked chicken
1 box frozen pea pods, cooked according to pkg. directions & drained
11 oz. can mandarin oranges, drained (reserve syrup)
1/4 c. bottled light cream cucumber dressing

Cut pineapple in 1/2 lengthwise. Cut fruit from shells; remove shells. Cut fruit into chunks.

Combine 1 cup pineapple, shrimp (or chicken), pea pods and oranges in bowl. Blend dressing with 2 tablespoons reserved syrup. Add to mixture in bowl, toss lightly. Spoon into shells and chill.
