ORANGE SNOW DROPS
COOKIE DOUGH:

2 sticks (1/2 lb.) unsalted butter, at room temperature
2/3 cup confectioners' sugar
2 1/2 tsp. grated orange zest
2 tsp. orange juice
1 pkt. True orange or 1 tsp. orange flavoring
1/2 tsp. pure almond extract (optional)
pinch salt
2 2/3 cups all-purpose flour

FOR ROLLING:

1 cup confectioners' sugar

Heat the oven to 325°F. Beat the butter and sugar together with a wooden spoon or a mixer until creamy.

Stir in the orange zest, orange juice, orange flavoring (if using) and salt. Mix in the flour just until ingredients are combined.

Shape into 1-inch balls. Arrange the cookies 1-inch apart on parchment or silicone-lined or ungreased baking sheets.

Bake until the cookies are a very light golden color (about 18 to 20 minutes).

Cool for 3-4 minutes on baking sheet, then roll in confectioners' sugar while still warm.

Cool on wire racks.
