APPLE BUTTER CAKE 
1/2 cup shortening
1 cup sugar
3 eggs
1 1/2 cups apple butter, divided
2 1/2 cups all-purpose flour
3 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 cup sour milk*

Cream shortening and sugar. Beat in eggs one at a time. Beat until light and fluffy. Stir in 1 cup apple butter. Sift together dry ingredients. Add dry ingredients to creamed mixture alternately with sour milk.

Turn into 2 greased and floured 9-inch cake pans or one 9x13-inch pan. Bake at 350°F for 30 to 35 minutes. Cool.

Spread bottom layer of cooled cake with 1/4 cup apple butter. Top with fluffy frosting. Cover top cake layer. Frost sides and top. Swirl remaining apple butter onto frosted top to give marbled effect.

Note: To make sour milk, measure 1 tablespoon lemon juice into measuring cup; add milk to make 1 cup and stir.
