GUM DROP CAKE | |
1 lb. white raisins 1 lb. gumdrops (no black ones) 1 c. pecans 4 c. flour 1 tsp. cinnamon 1/4 tsp. cloves 1/4 tsp. nutmeg 1/4 tsp. salt 1 c. butter 2 c. sugar 2 eggs 1 1/2 c. applesauce 1 tsp. baking soda in 1 tbsp. hot water 1 tsp. vanilla Sift dry ingredients and save part to dredge raisins, pecans and gum drops. Cream butter and sugar. Add well beaten eggs. Add flour mixture alternately with applesauce. Stir in soda and vanilla. Add fruit. Bake 2 hours in a slow oven, 325 degrees. Makes 1 large loaf. |
