GINGERY SWEET POTATO FRITTERS | |
1 lb. sweet potatoes or yams 1 egg 2 tbsp. flour plus additional for coating Salt 2 tsp. grated ginger (fresh) Oil for frying Quarter sweet potatoes. Put in large pot of salted water, bring to a boil and cook until tender, about 15 minutes. Cool and peel. Put in a food processor with egg, 2 tablespoons flour and 1/2 teaspoon salt. Puree until smooth. Stir in grated ginger. Heat 1/2" oil in a large frying pan at 375 degrees. Flour your hands and shape soft sweet potato mixture into patties, about 2 rounded tablespoons each. Coat the patties with flour and fry until golden brown. Drain on paper towels. Good as a side dish. |
