CREAMY CHEESE POTATOES WITH
CREAM CHEESE & CHIVES
 
1 1/4 c. milk
1 (8 oz.) pkg. softened cream cheese
1 tbsp. snipped chives
1/2 tsp. instant minced onion (may use fresh)
1/4 tsp. salt
4 c. cubed cooked potatoes
Paprika

Blend milk and softened cream cheese in a saucepan, stirring often, over low heat to dissolve cheese. When well-blended, stir in chives, onion and salt. Add potatoes and stir carefully to coat.

Turn into a 1 1/2 quart casserole and sprinkle with paprika. Bake in oven preheated to 350 degrees for 30 minutes. Serves 5-6. The cheese and milk can be blended in a microwave oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
