AVOCADO AND LIME JELLIED SALAD 
1 pkg. lime Jello
1/2 c. warm water
1 (8 oz.) can crushed pineapple
1/2 tsp. salt
2 tbsp. lemon juice
1/2 c. mayonnaise
3/4 c. whipping cream
1/2 c. avocado, diced

Dissolve gelatin in water. Drain pineapple and stir 1/2 cup of juice into the gelatin. Cool. When it begins to thicken, add pineapple, salt and lemon juice. Fold in mayonnaise, whipped cream and avocado. Place in wet mold and chill in refrigerator until firm. Unmold on crisp lettuce and garnish as desired. Serves 8.
