CLAM SAUCE WITH LINGUINI | |
3 (6 oz.) cans chopped or minced clams 3 cloves garlic, minced 1/4 c. chopped onion 1/3 c. olive oil 2 tbsp. butter 1 tsp. oregano, crumbled 1/2 tsp. salt 1/8 tsp. pepper 8 oz. linguini or spaghetti 2 tbsp. chopped parsley 1 tsp. grated lemon rind 2 tbsp. lemon juice Fresh grated Parmesan cheese Drain and save clam juice. Saute onion and garlic in oil and butter for 5 minutes. Add clam juice, oregano, salt and pepper, bring to a boil. Boil over high heat until sauce has reduced to 1 cup. This takes approximately 5 minutes. Add clams, parsley, lemon rind and juice. Heat thoroughly. Toss with cooked noodles. Serve with Parmesan cheese. Serves 4 to 6. |
