HOT SAUSAGE AND CHEESE PUFFS 
1 lb. hot or sweet sausage
1 lb. sharp Cheddar cheese, shredded
3 c. biscuit baking mix
3/4 c. water

Remove casing on sausage. Cook in a large skillet. Break up the meat with a fork until no longer pink. Drain. Spoon sausage into a bowl, cool. Add cheese, baking biscuit mix and water. Mix until just blended. Roll into 1 inch balls. Place on lightly greased cookie sheet, 2 inches apart. Bake at 400 degrees for 12-15 minutes. Makes 120 puffs.

To freeze: Freeze in single layers on cookie sheets. Place in plastic bags when frozen.

To reheat: Arrange in single layer on cookie sheet. Bake at 375 degrees for 10 minutes.
