AHH - SUMM CHILI | |
12 oz. beer (regular) 4 oz. chili powder 4 tbsp. paprika 1 tbsp. brown sugar 1 tsp. cumin seed 1 tbsp. oregano 1 1/2 tbsp. parsley, dried 1 (4 oz.) can beef broth 1 med. garlic clove, crushed 1 oz. canned Jalapeno pepper 1 c. onion, chopped 5 lbs. ground beef (80% lean) 1 (45 oz.) can tomato sauce Beer is Old Style. Tomato sauce is Hunt's Special Tomato sauce. Beef broth is Bovril. Parsley is cilantro. Marinate first 10 ingredients while preparing the balance of ingredients. Saute onion with olive oil until clear. Add ground chuck and cook until pink is out. Drain juice and save liquid for thinning if needed. Combine all ingredients and simmer for two hours. Taste and adjust seasoning by adding hot dry chili as desired. Continue cooking for one more hour, stirring frequently, and add meat juice or water to maintain desired consistency. Makes 20 (1 cup) servings. |
