REFRESHING AND HEALTHY QUICK
SALAD
 
1 large cucumber
2 large tomatoes (preferably the tasty, more expensive variety)
1/4 c. red wine vinegar
2 tbsp. gourmet salad vinegar
1 tbsp. grape seed oil (or your favorite oil)
1/2 tsp. garlic powder
1/4 tsp. onion powder
1/8 tsp. salt
1/8 tsp. black pepper
1 1/2 tbsp. parsley flakes

Chop cucumber and tomatoes. Mix in all other ingredients. Toss.

Let the salad marinate as long as you like.

* It can be eaten immediately, but next day is better. This recipe allows for endless variations. Serve either with juices, or drain off excess.

Serves 4 people.
