CAR-RAI-BAN NUT DELIGHT 
3/4 - 1 c. sugar or sugar substitute
1 c. mashed ripe bananas
1/2 c. oil polyunsaturated
1 c. shredded carrot
1 c. raisins
1 c. chopped walnuts
2 eggs or whites or egg substitute
1 1/2 c. whole wheat or all purpose flour
3 tsp. cinnamon
1 tsp. allspice
1/2 tsp. nutmeg
1/2 tsp. cloves
2 tsp. baking powder
1/2 tsp. baking soda
1 c. uncooked old fashioned quick oats

Combine sugar, banana and oil; add eggs, 1 at a time, beating well. Sift flour, baking powder, soda and spices. Stir into mixture. Add oats and carrots; mix well. Add raisins and nuts. Bake at 350 degrees in a 9"x13"x2" pan for 45 minutes or until toothpick comes out clean.

This can be a good recipe for diabetics or for low calorie, low sodium, low cholesterol diets.
