BROCCOLI TOFU PIE | |
1-1 1/2 lbs. chopped broccoli 4-5 tbsp. oil 3/4 c. chopped onion 3 tbsp. flour 1 c. stock or water 3/4 lb. tofu, drained, mashed 1 c. grated cheese 1/2 c. sunflower seeds 1/2 c. wheat germ 1/4 c. sesame seeds Rice or bulgar wheat Steam broccoli. Saute onion in oil until golden. Add flour, stir one minute until blended. Stir in stock and cook until thick and bubbly. Mix in tofu, cheese, sunflower seeds and broccoli. Pour into 2 quart casserole. Sprinkle Parmesan, wheat germ and sesame seeds. Dot with butter. Bake at 350 degrees for 30 minutes. Serve with rice or bulgar. |
