ALBONDEGAS (MEATBALL) SOUP 
1 lb. lean hamburger
Chili brick, small
2 cans beef broth
Zucchini, sliced
Carrots, sliced
Cilantro, chopped
2 eggs
Cummin, salt and pepper

Broth: 2 cans soup plus 1 can water. Add chili brick and break up. Add carrots, zucchini (and any other veggies left in your refrigerator). make meatballs by mixing meat, eggs, cilantro, cummin, salt and pepper. Meatballs will be very moist. Have broth boiling, drop meatballs in broth and cook for about 10 minutes. Put all in refrigerator and leave all night so fat is easy to take off. Great to do while you're already cooking dinner.
