OLD WORLD BUTTER HORNS 
4 c. flour
1/4 tsp. salt
1 yeast cake
1 1/2 c. butter
1 whole egg
4 egg whites (save whites for filling)
1/2 c. sour cream
1 tsp. vanilla

Sift flour and salt. Crumble yeast into flour; cut in butter as for pie crust. Add eggs, sour cream and vanilla. Mix very well. Chill.

Divide dough into 6 parts. Roll each piece into a circle 9" in diameter. Cut into 8 wedges.

Make filling. Beat 4 egg whites stiff. Add 1 cup sugar. Fold in 1 cup ground walnuts and 1 teaspoon vanilla. Place spoonfuls of nut filling on each wedge at wide end and roll to point. Place on ungreased cookie sheet. Bake 15 minutes in 400 degree oven.

NOTE: I have cut the egg whites down to 2 and used only 1/2 cup sugar in filling. The recipe makes too much.

I have made this many times using 3 eggs, but agree that reducing the egg whites & sugar for the filling is the way to go. However, I divide the dough into 8 parts instead of 6 and most importantly, roll the dough out on a confectioner's sugared surface, not floured!
