ONION SURPRISE | |
2-3 med. Spanish onions 2 tbsp. brown sugar 2 c. flour 4 tsp. baking powder 1 tsp. salt 1 egg, beaten 1 c. milk 1/4 c. oil Peel and thinly slice onions. Saute in 2 tablespoons butter until golden and soft. Spread remaining butter in 9" round baking dish. Sprinkle with brown sugar. Arrange onion slices in baking dish. TOPPING: Combine flour, baking powder, salt and sugar. Add egg, milk and oil. Batter is thinner than biscuit dough. Spread batter over top of onions. Bake 35 to 40 minutes at 350 degrees. Let stand 5 minutes. Loosen edges and turn out on serving platter and cut into wedges to serve. Delicious with roast or steak, even chicken. |
