QUICK AND EASY QUICHE 
1 frozen pie shell, thawed
1/2 c. sliced mushrooms
1/2 c. chopped cooked broccoli
Pepper
3 eggs
1/4 lb. shredded Swiss cheese
Paprika
2 c. cottage cheese

Prick pie shell in a few place with tins of fork. Bake at 350 degrees for 5 minutes. Remove from oven. In blender place cottage cheese, eggs, and a little pepper. Blend until smooth. In pie shell place the mushrooms, broccoli, and sprinkle with the Swiss cheese. Pour the egg and cottage mixture over the top of quiche, covering completely. Sprinkle with paprika. Bake at 350 degrees for about 35 minutes or until top is golden brown and firm to the touch.
