JAM CAKE 
1 c. sugar
1/2 c. butter
2 eggs, beaten
2 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. nutmeg
1 tsp. cloves
1/2 c. buttermilk
1 c. blackberry jam
1/2 c. chopped nuts
1/2 c. raisins

My grandmother used to make this before Christmas and I have such fond memories of watching her prepare meals and baked goods in her kitchen. Grease and flour 9 x 12 cake pan. Preheat oven to 375°F. Cream sugar and butter; add eggs. Combine dry ingredients and add to creamed mixture alternately with buttermilk. Mix well. Stir in jam, walnuts and raisins. Pour into 9 x 12 cake pan and bake approximately 45 minutes or until cake tests done in middle. Top with caramel frosting. If you use an aluminum pan remove cake from pan as soon as it cools.
