CARROT CAKE 
2 c. flour
2 c. white sugar
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
3 c. raw carrots, grind
1/2 c. raisins
1/2 c. nuts; optional

Mix all ingredients and beat in 1 1/2 cups vegetable oil. Add 4 eggs, one at a time. Put in 9 x 13 pan and bake at 350 degrees for 40-45 minutes.

When cool, frost with mixture of 1 pound powdered sugar, 1/4 cup butter, and 8 ounce package of cream cheese. Beat together until light and fluffy.
