EASY BEEF STEW 
2 lbs. cut up stew meat or round steak
1 med. onion, chopped
2 stalks celery, diced
6 carrots, cut up
8 or more med. potatoes, cut up
1 tsp. salt
Couple dashes of pepper
1 tbsp. sugar
2 tbsp. tapioca
1/2 c. tomato juice

Place meat in oblong casserole or 9 x 13 inch pan. Put vegetables on top of meat. Mix salt, pepper, sugar and tapioca and sprinkle over meat and vegetables. Pour 1/2 cup tomato juice over top. Cover with lid or aluminum foil. Bake at 275 degrees for 4 1/2 to 5 hours. (Might boil over, so can be placed on cookie sheet.)

This can also be cooked in the microwave oven. Cover with appropriate cover and microwave on low for 2 3/4 to 3 1/2 hours. Time depends on the wattage of your oven.

Since microwave ovens vary in power, you may need to adjust your cooking time.
