CURRIED CHICKEN 
2 chopped onions
2 tomatoes
4 cloves garlic, ground
2 tbsp. fresh ginger, ground
Approx. 3 lb. chicken thighs
1 1/2 tsp. curry powder
1 pt. plain yogurt or 8 oz. unsweetened coconut paste & 2 tsp. lemon juice

Fry/saute 2 chopped onions and 2 chopped tomatoes until onions are clear. Add finely ground garlic and ginger. Add chicken and curry powder; brown/saute for 30 minutes. Add yogurt or coconut paste/lemon juice. Cover and simmer 15-20 minutes or until cooked thoroughly.
