CHEESECAKE CUPS 
1 c. cottage cheese
1/3 c. plus 2 tsp. whipped cream cheese
1 egg
1 tbsp. granulated sugar
1/2 tsp. vanilla extract
2 graham crackers (2 1/2 inch squares), made into crumbs

Microwave method: In blender container combine all ingredients except crumbs and process until smooth. Spray four 6 ounce microwavable custard cups with nonstick cooking spray and spoon 1/4 of cheese mixture into each cup; sprinkle each with 1/4 of the crumbs. Microwave on Medium (50%) for 8 minutes, rotating each cup 1/2 turn halfway through cooking. Let stand for 1 minute.

Conventional method: Preheat oven to 350 degrees. In blender container combine all ingredients except crumbs and process until smooth. Spray four 6 ounce custard cups with nonstick cooking spray and spoon 1/4 of cheese mixture into each cup; sprinkle each with 1/4 of the crumbs. Set cups on baking sheet and bake until cheese mixture is set and crumb mixture is golden brown, about 20 minutes.

Each serving provides: 1 Protein Exchange; 1/4 Bread Exchange; 65 Optional Calories.

Per serving: 149 calories; 9 g protein; 8 g carbohydrate; 49 mg calcium; 306 mg sodium; 91 mg cholesterol; 0.4 g dietary fiber.

Since microwave ovens vary in power, you may need to adjust your cooking time.
