PUMPKIN APPLE STREUSEL 
2 1/4 c. flour
2 c. sugar
1 tbsp. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 c. Libby pumpkin
1/2 c. vegetable oil
2 c. apples, finely chopped

TOPPING:

2 tbsp. flour
1/4 c. sugar
1/2 tsp. cinnamon
4 tbsp. butter

Combine first 5 ingredients in a large bowl. Combine in a medium bowl eggs, pumpkin and oil. Add to dry ingredients and stir until moistened. Stir in apples. Fill paper lined muffin cups 3/4 full. Mix the topping and sprinkle on top of muffins. Bake for 35 to 40 minutes at 350 degrees.
