SPINACH LASAGNA | |
1 box lasagna noodles 1 (10 oz.) pkg. frozen chopped spinach 3 eggs, beaten 1 (24 oz.) carton cottage cheese 10 oz. Mozzarella cheese, grated 8 oz. Swiss cheese, grated 1/2 c. Parmesan cheese 1 (32 oz.) Italian spaghetti sauce Salt to taste Cook lasagna noodles according to directions. Drain and set aside. Cook spinach according to directions. Drain. Mix spinach, eggs, all cheeses and salt. In 3 quart rectangular casserole dish, layer: tomato sauce, noodles, cheese mixture. Repeat layers ending with sauce on top. Bake at 350 degrees for 40 minutes. Can be frozen. Serves 8. |
