SHRIMP CASSEROLE 
3 c. shrimp or crawfish
1 c. chopped onion
1 c. green pepper
1 c. celery
2 cloves garlic
1 stick butter
1 can Cheddar cheese soup
1 can mushroom soup
1 sm. jar pimento and juice
3 c. cooked rice
1/4 c. bread crumbs (optional)
1 tsp. Tabasco
1 tsp. salt
1 c. chopped green onions
1/3 c. chopped parsley
1 tsp. black pepper

Cook onion, pepper, garlic, celery and butter until tender. Add soups, parsley, green onion, shrimp and chopped pimento. Heat thoroughly. Stir in rice, put in 3 quart casserole, sprinkle with bread crumbs. Bake at 350 degrees for 30-45 minutes.
