TACO SALAD 
1 1/2 lbs. ground beef
1 1/2 c. diced onion
1 c. diced celery
3 cloves garlic, diced
1 lb. Velveeta cheese
1 lg. head lettuce
2 lg. ripe tomatoes
1 can diced Rotel tomatoes with chilies
Salt, chili powder, and cumin to taste

Brown beef in small amount of oil. Saute vegetables until soft and brown. Combine meat and vegetables and simmer together. Season with salt, chili powder, and cumin. In top of double boiler, melt cheese and Rotel tomatoes. Cut lettuce and dice tomatoes in large bowl. Add meat and vegetables; mix lightly and top with hot cheese mixture. Serve immediately with 1 package of corn chips.
