VEGETABLE PIE 
1 (10 inch) pie shell (unbaked)
2 zucchini (sliced) about 3 cups
1 med. onion (sliced)
1 green pepper (sliced)
1 med. tomato (sliced)
1 lb. fresh mushrooms (sliced)
3 to 4 tbsp. butter
Garlic salt to taste
1 tsp. pepper
1 c. grated Mozzarella cheese
1 tsp. salt
1 c. mayonnaise

Layer sliced tomato in bottom of pie shell. Saute onion, zucchini, pepper, and mushrooms until vegetables are crisp, but not soft. Drain well. Toss with seasonings. Fill pie shell. Combine mayonnaise and Mozzarella. Spread on top of vegetables (completely cover). Bake at 350 degrees for 1 hour.
