TURKEY PARMIGIANA 
1 egg or 2 egg whites or 1/4 c. of defrosted no-cholesterol substitute
1 lb. Louis Rich turkey breast slices
3/4 c. of fat-skimmed turkey or chicken broth
4 oz. part-skimmed Mozzarella cheese
2 tbsp. salad oil
1/2 tsp. salt
3 oz. tomato paste
1 tsp. oregano
1/3 c. seasoned dry bread crumbs
Dash pepper
1 clove garlic, minced
Shredded parsley

Fork-blend the egg and the oil. Dip the turkey slices into egg mixture, then coat both sides lightly with bread crumbs. Arrange the turkey in a single layer on a cookie sheet prepared with non-stick spray. Bake 8 minutes at 450 degrees until crisp. Do not turn.

Transfer to an oven-proof platter. Combine salt, pepper, tomato paste, broth, garlic and oregano. Simmer uncovered over moderate heat until thickened, then spoon over turkey. Top with Mozzarella cheese, then broil until cheese bubbles. Garnish with parsley. Yield: 4 servings. 1 serving = 275 calories (10 calories less with egg whites or substitute).
