PRUNE CAKE | |
3 eggs 2 c. sugar 1 c. oil 2 c. flour 1 c. buttermilk 1 c. cooked prunes 1 tsp. baking powder 1 tsp. baking soda 2 tsp. nutmeg 2 tsp. cinnamon 1 tsp. salt 1 tsp. allspice 1 c. chopped pecans Cream eggs with sugar and oil; beat well. Add buttermilk and prunes. Stir together dry ingredients and mix in. Beat on medium speed for 3 minutes. Stir in pecans. Pour into a 9x13 inch pan. Bake at 350 degrees for 35 minutes. GLAZE: 1/2 c. buttermilk 1/2 tsp. baking soda 1 c. sugar 1/4 c. butter 1 tbsp. white corn syrup 1 tsp. vanilla Cook about 10 minutes in saucepan over medium heat, stirring constantly until slightly thickened. Pour over cake while hot. |
