SUGARLESS HEALTH COOKIES 
1 c. raisins
1/2 c. prunes or dates
1 c. water
1/2 c. vegetable oil
2 eggs, beaten
3 tbsp. liquid sweetener
1 tsp. vanilla
1 tsp. baking soda
1 1/2 c. flour

Boil raisins and prunes (or dates) in 1 cup of water for 3 minutes. Cool, then add all remaining ingredients. Mix well and chill for 2 to 3 hours or overnight. Drop on cookie sheet and bake at 350 degrees for 10 to 12 minutes. Chopped nuts are also good in this recipe. Great for diabetics watching their sugar intake.
