DILLY BEANS | |
4 lbs. young sm. green beans 1 tsp. cayenne pepper 4 heads dill (or dill seed - 1 tsp.) 1/4 c. salt 4 cloves garlic 2 1/2 c. water 2 1/2 c. vinegar Pack beans lengthwise into hot jars, leaving 1/4 inch head space. To each pint add 1/4 teaspoon cayenne pepper, 1 clove garlic, 1 head dill (or seed - 1/4 teaspoon). Combine water, salt and vinegar and bring to boil. Pour over beans and seal tight. Process pint jar for 10 minutes in boiling water bath. Cool slightly before removing from water or make sure cool air does not blow on hot jars. Let beans set for 2 weeks before eating. |
