SHRIMP OR CHICKEN CREOLE 
4 tbsp. flour
5 tbsp. shortening
1 lg. onion, chopped
6-8 green onions, chopped
1/2 c. celery
1/4 c. bell pepper
1 can tomato sauce
1 can water
Salt and pepper
1 tbsp. Worcestershire sauce
1 tsp. Tabasco sauce
3/4 lb. shrimp or chicken

Add flour to shortening and cook medium heat until rich dark brown, stirring constantly. Add precooked chicken and remaining ingredients (except shrimp). Simmer for 30 minutes. Add shrimp last 10 minutes. Season to taste. Serve over rice.
