PUMPKIN BREAD OR ZUCCHINI BREAD | |
2/3 c. Crisco 2 2/3 c. sugar 4 eggs 2/3 c. water 3 1/3 c. all-purpose flour 2 tsp. baking soda 1 1/2 tsp. salt 1/2 tsp. baking powder 1 tsp. cinnamon 1 tsp. cloves 2/3 c. nuts 2/3 c. raisins 16 oz. pumpkin or 3 c. zucchini with 2 tsp. vanilla (run zucchini in blender) Grease 2 large or 4 small loaf pans. Cream shortening and sugar. Add eggs, pumpkin, and water. Blend flour and dry ingredients; add to creamed mixture. Add nuts and raisins. Bake in 350 degree oven for 60 to 70 minutes. Cool slightly before removing from pan. Will keep in freezer. |
