HOT RED PEPPER JELLY 
2 c. hot peppers with seeds, de-stemmed
1/2 c. red bell pepper, seeded & chopped fine
1 1/2 c. cider vinegar
1 tsp. salt
6 1/2 c. sugar
1 (6 oz.) pkg. Certo Pectin

Place peppers, vinegar and salt in a pot. Bring mixture to a boil and let simmer 5 minutes, stirring occasionally. Add water if needed, to total 3 cups. Return to pot and stir in sugar. Bring to rolling boil. boil 1 minute. Add pectin while boiling. Boil 1 minute more, stirring occasionally. Remove from heat. Ladle into sterilized jars, leaving about 1/4" room on top. Seal jars and allow to cool.
