SCOTCH SHORTBREAD | |
2 sticks butter 1/2 c. confectioners' sugar 2 c. sifted all-purpose flour Cream softened butter with sugar; mix well. Add flour; mix well. Separate dough into 2 balls and press into 7 inch circles on cookie sheet; flute edges and prick top with fork. May sprinkle top with sugar, if desired. Chill at least 15 minutes. Bake at 350 degrees for 5 minutes, then reduce heat to 275 degrees and bake until light brown, 15-20 minutes. If desired, cut into wedges while still warm. |
