OREGANO VINAIGRETTE 
1 sm. anchovy fillet, minced
2 med. garlic cloves, minced
1 tsp. minced fresh oregano
1/2 tsp. Dijon mustard
2 tbsp. red wine vinegar
1/4 tsp. salt
1/4 tsp. freshly ground pepper
2/3 c. extra virgin olive oil

In a small bowl, whisk together the anchovy, garlic, oregano, mustard, vinegar, salt and pepper. Whisk in oil in a thin stream. Makes 2/3 cup.
