BATTER FOR ONION RINGS AND FRIED
VEGETABLES
 
1 oz. oil
1 oz. water
2 eggs
1/4 bottle beer
9 oz. arrowroot
Enough flour, seasoned with salt & pepper to dust onion rings

Mix the oil and water and blend in the eggs. Whisk in the arrowroot and beer. Dust onion rings with seasoned flour and fry in hot deep fat.

An assortment of vegetables cooked in this manner make an interesting appetizer. Present individual selections on napkins accompanied by a fresh tomato or garlic mayonnaise sauce. Makes about 2 cups.
