SWEET POTATO SOUFFLE 
3 c. mashed sweet potatoes
1/2 c. milk
1/3 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
Cinnamon, as much as you desire

Mix and pour into baking dish.

TOPPING:

1 c. brown sugar
1/3 c. melted butter
1/3 c. self-rising flour
1 c. nuts, chopped
1 c. coconut, optional

Combine sugar and flour. Add nuts and butter. Scatter on top of souffle. Bake at 300 degrees for 25 minutes.
