SWEDISH NUT BARS 
6 eggs, separated
1 1/4 c. granulated sugar
3 1/2 c. finely ground walnuts
3 tsp. almond extract

Preheat oven to 325 degrees. Line bottom of 9 x 9 x 2 inch pan with wax paper, grease. Beat egg yolks until thick and tripled in volume. Add sugar slowly, beating until thick...about 10 minutes. Fold in nuts and extract. Beat egg whites until stiff but not dry; blend into yolk mixture.

Pour into pan. Bake about 1 hour. Cool 10 minutes; turn out, remove paper, cool. Cut as needed. Keep refrigerated. Yields 2 1/2 dozen.
