SAUTEED BAY SCALLOPS 
2 lb. bay scallops
1/4 lb. butter, melted
1 c. finely chopped onions
1/2 bunch parsley, finely chopped
Juice of 2 lemons
1 c. bread crumbs

Saute onions and parsley in butter. Remove from heat. Pat scallops in pan until all sides are full coated with butter. Place in baking dish in one layer if possible.

Sprinkle lightly with salt and pepper. Sprinkle with lemon juice, and then with crushed croutons or buttered bread crumbs. Bake 20 minutes on top shelf of 400 degree oven. Serves 8.
