COCONUT BREAD 
2 c. pancake mix
1 c. coconut
1/4 c. sugar
3/4 c. chopped pecans
1 tsp. cinnamon
2 eggs
1 1/2 c. milk
3 tbsp. butter, melted

Grease a loaf pan and line bottom with wax paper, then grease again. Combine first 5 ingredients and mix well. Beat eggs in separate bowl. Add milk and melted butter. Stir in dry ingredients; mix thoroughly until moistened. Pour batter into the prepared pan. Bake at 350 degrees for 50 to 55 minutes. Remove from pan and cool. Serve with whipped butter.

WHIPPED BUTTER:

1/2 c. butter
1/2 c. maple syrup

Beat butter until light and fluffy; gradually beat in syrup. Delicious.
