QUICK DUMPLINGS 
2 c. potatoes, cooked & mashed
2 tbsp. fat or butter, soft or melted
1/2 tsp. salt
1/4 tsp. nutmeg, or less to taste
1 tbsp. parsley
1 sm. white onion, grated or finely chopped
1 egg
1/4 tsp. pepper
1 c. flour, more or less
Boiling salted water

Mix potatoes with onion. Beat in butter. Beat in egg and nutmeg to taste. Work in enough flour until dough can be handled. Shape into balls and drop into salted boiling water. Cover and cook about 15 minutes.
