SUGAR FREE RAISIN BARS 
2 c. raisins
1/2 c. water
6 packets of Sweet and Low
3/4 c. cooking oil
2 eggs
1 c. unsweetened applesauce
2 c. sifted flour
1 tsp. baking soda
1/4 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
1 tsp. vanilla
1 c. chopped nuts

Boil the raisins and water. When cool, stir in the applesauce, eggs, sweet and low, and cooking oil. Sift together the dry ingredients and add to the first mixture. Add the vanilla and nuts and pour into 9 x 13 inch pan. Bake in a 350 to 375 degree oven for 35 to 40 minutes or until done. Cut in squares.

DIETITIAN'S NOTE:

Forget the nuts and you'll go nuts over these tasty bars. With 1/2 cup egg substitute instead of eggs, this recipe becomes low calorie, low in fat and cholesterol free. There's also 27 grams of fiber hidden in this "health bar" recipe.
