"SPANKY'S" GOLDEN FRIED
CORNBREAD
 
2 c. self-rising cornmeal
1/2 tsp. salt
Cooking oil

Boil approximately 2 quarts of water. Mix cornmeal and salt in medium size mixing bowl. Add 2 tablespoons of cooking oil. Pour in boiling water 1 or 2 cups at a time while stirring batter. Continue to add water until batter is of medium consistency (do not mix too thin). Spoon batter into hot cooking oil and fry cakes until golden brown. Makes 8 to 10 pieces. (Fry in 10 inch skillet. Cover bottom with oil.)
