PINEAPPLE BREAD | |
2 eggs 1/2 cup butter, melted 1 c. white sugar 1 c. crushed pineapple, with juice 1 tsp. vanilla extract 2 1/2 c. all-purpose flour 3 tsp. baking powder 1/2 tsp. baking soda 3/4 tsp. salt 1/2 c. chopped walnuts Preheat oven to 350°F. Grease one 9x5x3-inch loaf pan. Beat eggs slightly; add butter and sugar. Beat until smooth. Stir in pineapple and vanilla. In a separate bowl, combine flour, baking powder, baking soda, salt and walnuts. Stir well and pour into pineapple mixture. Stir to moisten. Pour into loaf pan and bake at 350°F for 50 minutes. Test doneness with a toothpick. Let stand 10 minutes before removing from pan. Cool completely before slicing. |
