VEGGIE QUICHE 
2 c. veggies, frozen or fresh
1/2 chopped onion, frozen
1/2 chopped green pepper, frozen
3 - 4 oz. shredded cheese
3/4 c. Bisquick
1 1/2 c. milk
2 eggs or egg substitute
1 tsp. salt

Spray 10-inch pie plate with pan spray. (I used casserole) Steam veggies until partially cooked. Dump veggies in pie plate or casserole along with cheese. Beat Bisquick, milk, seasoning and eggs until smooth pour over veggies. Cook 400 degrees for 35-40 minutes or until center--not runny.
